A last is described by a small number of measurements, and every one of them changes how a shoe fits. This is the set worth stating.

Length
Toe to heel, and the tolerance it is held to per pair
Ball girth
Around the widest point, where fit is first decided
Instep girth
Over the top, where two sizes differ while length matches
Waist girth
Through the arch, which decides whether the upper closes
Heel height
And the toe spring it implies, because the two move together

How much the sole lifts at the front, and where the flex sits

Why the instep is the one that catches people.

Because it is the measurement that differs between two lasts of identical length and ball girth. It is the dimension a size designation hides, and it is where a shoe that measures right still fits wrong.

The one worth avoiding.

Quoting a toe spring without the heel height. The two move together, and a spring quoted alone describes a shoe that does not exist.
